Broccoli with Balsamic and Prosciutto

This was so good and extremely easy to make. The prosciutto flavor seems to become more pronounced after baking so a little goes a long way. The broccoli started to get brown after less than 15 minutes in the oven, I think possibly because there wasn’t enough oil. I will add more oil next time and keep an eye on them to make sure that they do not burn!

Chicken with artichokes

This was so easy and had a great effort to taste ratio! I couldn’t find any pearl onions so I used shallots. I think that pearl onions really would have made this dish even better. I only used a can of artichoke hearts (no Trader Joes here!) and would definitely up it to at least two cans next time. Also used bone-in, skin-on chicken thighs rather than chicken legs. Also used red wine vinegar as that is what I had (didn’t want to buy another vinegar for two TBS in a recipe) and didn’t have poultry season, but found it wasn’t lacking, possibly due to the flavorful chicken stock I had).

Lemon Chicken Roast

This recipe was delicious! I used bone-in, skin-on chicken thighs. I didn’t add the olives until the very end because I wanted them to stay “juicy”. I did not add any butter and with skin-on meat, I didn’t notice any dryness. The big down-side of this recipe is that it is rather expensive with the addition of the pine nuts and the olives so I doubt I’ll be making it regularly.

Lemon Meltaways

These were pretty good, but I could only find roasted cashew butter; I think it made my meltaways have a more prominent cashew flavor than the recipe intended. May try again if I have raw cashew butter on hand. Will also increase the lemon by 1 TBS to test out a more lemon-y treat. I also used standard muffin cups and filled them pretty full (only used five). Would probably have preferred the smaller dessert cups used in the recipe.
